A wonderful week in review

It’s so sad when days seem to blend together. Last week was a kind of blur as I look back.
Highlights of the week
Sunday – Going to the dog park with Lucy – gorgeous chocolate lab who belongs to our neighbors. Watching Lucy chase the chuck it ball. She has such speed and grace. Lucy is absolutely amazing. She is also one of the best behaved dogs I have ever met. She’s just delightful. Yes, I want a doggie! ☺
The BEST part is I get to take care of her while the neighbors are in sunny California. ☺ They leave Thursday afternoon and return Sunday evening.
Monday – So, I am making an extra effort to cook healthy dinners and with the onset of the chilly weather, something warm always sounds good.
So, taking inspiration from my new best friends who write this foodie blog “Twin Tables” I chose to make the
Pasta e Fagioli soup. I added white mushrooms to mine and it was simply satisfying served with garlic toast. Yum!
Tuesday & Wednesday – Trying to remember - only reflects the impending senility that will one day take over this feeble brain, I know we celebrated a work event on Tuesday – it was a milestone, the release of the websites for the consumer PR marketing team. So there was cheese, chocolate and champagne. But what did I have when I came home? Salad?
Wednesday, I think was salad again. Violin lesson, for sure and it was a nasty rainy blustery day, I do remember that.
Thursday, I went all out and made a huge meal, incorporating a lb. of pasta- Chicken Al Fresco. I got it awhile ago off of another foodie blog and of course cannot find the blog, but I do have the recipe. It turned out to be a LOT of food, but very, very tasty.
Friday – WAS AWESOME! Day Off! I did all of things I could ever want to do on my day off.
• Started the day visiting Lucy, throwing a ball in the backyard, feeding her, playing on the neighbors piano, which I’m addicted to now and want this piano- It’s a Roland digital piano and I love it! I’m trying to figure out where we could put one in our house…. Hmmm……
• Clean the downstairs- vaccumed the entire house, laundry
• Yardwork – raked the backyard, did some weeding, cleaned up some parts of the backyard, swept the back stone pad and the back concrete, put Grill away, cleaned out our fireplace thing ☺
• Played with Miss Lucy- threw the chuck it at the park
• Grocery shopped for dinner and for the dinner for Sat.
• Thought about all of the work I need to do for work and so got on the computer for a little bit and decided – NO- this is a day OFF, which means NO WORK- I’ll just work some on Sunday. ☺
So for Friday dinner I made the Corn Chowder, which turned out pretty damn good. Throw some grated cheddar on there with green onions and crusty French bread! Delic.
Saturday I was excited to have friends over for dinner and the menu was of my choosing. So I decided to make the Kells Irish Lager Beer Cheese Soup. This was the Kells executive chef’s recipe featured at the M&C Contest.
Kells Lager and Tillamook® Cheese Soup
Tillamook® Vintage White Extra Sharp, Tillamook Medium Cheddar

Ingredients
2 1/2 cups - Kells Lager
3/4 pound - Tillamook® Vintage White Extra Sharp Cheddar
1/4 pound - Parmesan
1/4 pound Tillamook® Medium Cheddar
1 teaspoon - Paprika
1 teaspoon - Garlic
1 teaspoon - White Pepper
2 cups - Heavy Cream
TT - Salt
1/4 cup - Roux (equal parts flour and butter)
Preparation
Bring the Kells lager to a simmer, reduce to half. Add cheese, heavy cream and seasonings. Bring to a simmer and roux.
So, what I did basically is boil the beer until it reduced to about ¾ the amount, I don’t remember how long I simmered it for, but enough to make the house smell like a brewery.
Grated 1.75 lbs of the VW extra sharp cheddar and eye-balled the parmesan, I think I grated up to about 4oz and then the medium cheddar I kind of just guessed with grating about ¼ to ½ a cup.
The roux was 2 tablespoons of melted butter combined with 2 tbsp of flour.
For the garlic I simply used garlic powder and I think that did the trick.
For the rest of the meal, I pre-made mashed potatoes – not the best thing considering they were dry when I served them, I needed to simply whip them up again with milk and butter before serving. But my guests were gracious and even went for a second helping of the potatoes.
Chicken- I made skillet browned chicken with a balsamic, honey and basil sauce coated over them in the last minute of cooking. Turned out good, chicken was a little dry. I have a hard time balancing the doneness required with Chickent while not making it dry. With chicken it’s better to ensure it’s done, but where is the line between done and over done and dry? Toughie. I’ll get it… one of these days.
Asparagus –Roasted
Then earlier I made a Harvest crumble for dessert with cranberries, pears and apples. We stuffed ourselves silly and by the time dessert came around… well I simply put some in a container and sent it home with my pals, I figured they could have it tomorrow. ☺ Hopefully they had ice cream to make it a-la-mode, because a crumble just isn’t the same without ice cream.
Best part of Saturday’s dinner? – the company and the outdoor fireplace! ☺ It was a clear and crisp evening and sitting by the fire was warming and wonderful. Aubs (friend) – brought an awesome Chianti and we enjoyed that while the boys enjoyed their beer.
After they left I whipped up some hot chocolate with brandy and sat by the fire. YUMM in the TUM and the fire was cozy on my legs.
I couldn’t have had a more wonderful few days. Testament to the importance of taking a day off now and then! Life is more than work…. as it should be! ☺

So.
I leave for Las Vegas tomorrow to work another event. It’ll be fun, but I’ll be glad to be home for awhile after this trek.
It’s quick. Fly tomorrow fly back Saturday. We’ll work at the event tomorrow evening and since we will be in Vegas we may as well check out the sites. I guess we’re cabbing it for the duration, which will add up if we are not careful. But after the event, we’ll probably want to do something, I’m sure.
In looking over the time and events from February until now, I have been exceptionally fortunate to have seen and experienced what I have so far.
I have been exceptionally fortunate to have been able to travel for work and have it paid for. Working incredible events and enjoying fine food and wine.
I usually try not to take for granted the things I have been given and this has been a really incredible journey. I’ve learned about me and I’ve learned about others who have experienced different things in life. It’s good.
Nov. 7th is tomorrow. I have to try to make note of each day so I don’t lose the day too quickly.

I love Halloween.
Actually I love seeing the changing of the leaves and stomping on the dried leaves that have already fallen from the trees.
“crunch, crunch” under my feet. I have fond memories of Halloween time or just fall time in general. One memory is of walking home on a crisp cool fall evening. Ryan at my side. We had a few hours at The Goose. Most likely a few beers with sandwiches, Ryan had a Reuben I’m sure.
But the walk home was always enchanting. Seeing the moon glowing from the sky and our walk… so quiet and relatively short, but seeming so long at that moment.
I loved the crispness of the leaves under my feet. So Ryan at one point went up to a tree we were just to walk under. He shook the base. The leaves came falling and I couldn’t have enjoyed that more. Feeling the lightness and crispness of leaves falling across my face, onto the ground and then the joy I felt just stomping on those leaves and hearing the “crunch” of them under my feet.
That’s what makes this end of October so romantic and amazing. To see the leaves falling to the ground only to join others and eventually decay into nutrients that will one day be advantageous for the leaves yet to spring from the trees that tower over and above in season yet to arrive.
Isn’t the process of nature amazing.
We all have a special moment with the season’s in this life. Mine most certainly fall. Also, life can tend to slow down a bit, with the cooling of the weather, people may tend to want to stay at home more. relish the comfort that home provides.
Personally? I just love the excuse to not go to the gym.
Actually, I would love to run outside for a change. But the time in ones life and with work, it just doesn’t seem to become natural.
Either way. I’m enjoying Ryan’s Guinness in the Keg. It’s low calorie, it’s warming and it’s delicious.
Today, the day before Halloween, Ryan and I spent an hour or so at Moon, one of our favorite haunts and someone sculpted an Obama pumpkin. I loved it.

Trying to start where I left off is like having to travel back in time and I might need to in order to remember all of the things that have transpired since.
Since lists seem to be the easiest way to express details without getting too terribly descriptive here is my list of activities since my last post.
* Seminar 1 Cheese, cheese and more cheese… no, no Anthony Bourdain siting (demonstrably disappointing).
* Seminar 2 - Seasonal Seafood - Nothing like seeing be-headed fish and being served Sea urchin Flan with Fois Gras - Okay ummmm wierd, all provided by Chef Marcus Samuelsson.
*Low-Light -No visit to Gordon Ramsay at the London

*Saturday Evening - Enjoyed a 4-course meal paired with wine at The Union Square Cafe - Pure deliciousness in every bite. Cocktail prior to dinner there included white cosmopolitans, Lobster Cannoli’s and artichoke bruschetta.
*Sunday - Last day of sampling- PHEW!
*Then a little bit of a break began!
*Enjoyed a nice 10 block walk to the PATH train. Figured out the ticketing, hopped on train, made it to Journal Square in Jersey City. C picked me up and I got the best welcoming a friend could have. Opened the front door to S&C’s and saw a big wide eyed smiling Dunc! Oh my goodness, how could you not just fall in love with him. He is adorable!
* I felt so happy to be able to see S&C and Augie and Dunc who is walking like crazy now and it was so nice to just have the time to finally relax and catch up. I was invited to their potluck dinner with their neighbors.
* It was a fun and interesting evening. Lots of fun with the kids, food and some fun conversations, but when the topic of the conversation got a bit political it wasn’t one I was entirely interested in contributing.
*Either way, it’s wonderful to see the support the S & C have around them, the neighbors are good solid people and definitely value their families and S&C.
* Monday - Flew back, taxi’d home, changed, hopped in the car and into the office, loaded car, ran to Kells unloaded everything for Thursday’s event yes there was no break really as there was so much to do before Wed. & Thursday for the M & C Cooking Craziness. Oh and had a meeting at 5:30 for planning of the AMA Conference.
* Tuesday - Slept in a bit, got ready, partly packed, ran into office, ran home again picked up luggage ran back into town picked up Ryan, checked into hotel and Ryan drove colleague and I to dinner at Le Pigeon where the T-Team was with our guest Celeb.Chef for dinner. Dinner was amazing. We ordered everything and I mean everything on the menu. Then the restaurant treated us to their entire menu of desserts all paired with dessert wines. Yes I think I’ve tipped the scale this week.
* This followed by drinks at Doug Fir - Oh my.
*Wed - Visitor’s Tour for the Cooking Craziness -with the participants. Bus picked us all up at Hotel then we loaded bus with breakfast bags and coffee and headed out. Enjoyed insider’s tour of the T. Cheese Making facility. Fun. Lunch was provided and of course free Ice Cream. I couldn’t resist so I got the Coffee Almond Fudge & Marionberry Pie - I have no will power anymore.
*Back to Hotel- Back to Kells, Back to Hotel. Opened a bottle of wine in the room, enjoyed a glass, then we walked to Kells for a special dinner for the guests.
*Dinner was amazing, Kells is amazing. Then on to Huber’s for drinks (Spanish Coffee) with the T-Team and a few participants. It was a great time. After Huber’s on to the bar back at the Hotel for night caps (Flaming caramel apple martini).
* Big Day - The day we’ve been planning for for the last 7 months. Nothing but M & C goodness and craziness and fun. Kells’ servers were rockstars! They made the event fantastic, really. They know how to do it and they do it right. I couldn’t express enough to the Kells team about how they really enabled the event to be so successful. Luckily I got to express that to them, as the servers were hanging out having drinks outside later and I got to talk to the Sous chefs and servers and just thank them and thank them. I wanted to buy them all a drink but it appeared that they got their drinks taken care of. Another time, perhaps. I lucky to share an Irish Car Bomb with “B” who was our server at the dinner and at the M&C Event, he even bought me a vodka soda, which was so nice of him. I tell you, I felt special and spoiled.
* Got to go home finally, after hanging in the cigar bar with R and his colleague and his wife, they are awesome.
*Ghost Dog and Wife and Miranda are also to thank, as they stuck it out till pretty late, supporting me at the event, I tried to make sure they got a sample of all of the dishes. It was nice to have them their as my rescue!
*Once home I hugged my kitty and hugged Ryan and we hung out together chatting and it just took me forever to wind down and I actually didn’t end up going to bed until 5am.
*Friday was a bit hectic, I slept till 11:15am and woke up to a text from my colleague to meet at Kells to pick up all the leftovers from the event at 12:30pm. Okay, so jumped into shower, made coffee and toast and just sped through getting ready. Luckily made it to Kells even before my colleagues and started in on the clean up. Loaded our cars and ran it all to storage at work and I had to go back to Kells to get the rented trees we used for decor for the event and Ryan from Kells helped me, bless his heart, with getting the trees in my car, he even wrapped the botton in plastic to ensure no dirt got in my car. - Testament to the extent of service you are given by the Kells team! THANK YOU!
*Ah okay so now it hit me that it’s Ryan’s birthday and we invited a few select friends out for drinks at our house. SHIT, okay gotta stop at store, pick up snackies and drinks and pressies for Ry. Luckily it all worked out fine. It was such low stress with having Miranda and B and Ty and Aym and Travis, tys and Suj, Darin & M, Ghost dog and Wife, I just could only handle a small group, at this time, it was a relief, really.
*Saturday - Slept in pretty late, watched some t.v. which I hadn’t done in a long time, then we got ready for dinner with the family, it’s Ry’s Pop’s big 60th too (they share the same birthday) so we had dinner at Ringside. I’d never been there and it was really nice. I enjoyed too many delicious onion rings, crab cakes, salad, some of Ryan’s sundae and creme brulee. Yum.
*Home and the couch called our names - I got Ryan a number of blue ray movies and one was the Planet Earth series. So we watched the Mountain episode on that. Incredible. The crispness of the image on the t.v. is amazing, beautiful.
Phew - what a long week and back to work I go on Monday. Today is clean up and organize myself day full of laundry and cleaning and getting ready for my “to-do” list on Monday. One of the big to-do’s is to look for flights for the next event I have to work with a colleague on Nov. 7th in Las Vegas.
*Really I am ready for a vacation. Seriously!
Adventure, work, food, drink, dinner, dessert….tomorrow.

The Pod really was fantastic. I liked the coziness of the room, really. It was simple, secure and it had wi-fi.
I set my alarm for 8:30, but naturally woke up earlier than that, which was kind of surprising, but I usually have a hard time adjusting to sleeping in foreign environments and I’m battling about 3 hours change.
Either way, the Pod had a nice reception area and offered breakfast. So I got a delicious french press coffee with a breakfast of yogurt with granola and berries.
Yum!
So, I sat and enjoyed the environment and the wi-fi. Did some work online for a bit. I had lots of time because I didn’t need to be at the Millenium Broadway until 11:30. It was a wonderful morning.
SO, I had the trek to Millenium from Pod all mapped out. I decided to walk it, even with luggage. First mistake… going the wrong way. I headed out on 51st to second and then I was all of a sudden cut off. Doh, I went past 1st, I needed to go the other way. Dammit. Already my luggage took quite a beating from the blocks I had walked only to have to turn around and go towards 7th and 44th. I was at 51st and 1st.
I caved. I waved a cab, yup, made it to the Millenium and in perfect time.
Holy smokes my room is exquisite and perfect and absolutely ludicrous. Downright self-indulgent. I have my own bathrobe and slippers… the lot. Coffee and tea making facilities, mini-bar.
Well I got to check into the hotel early. I was in awe for a bit, had to realize I had minimal time and then I had to head to set up for our shift for working the event this weekend.
Amazing. It was a breeze. I love the advertising representative I’m managing our booth with for this event. She’s great. This is going to be a fun weekend.
This event has a ton of food samples and beverage samples so we got to enjoy some of those. Mainly was the King Crab in a white sauce, oh holy cow, exquisite. I also got a glass of champagne while my colleague got a glass of red.
We wrapped up the event. Then decided we would skip the kick off gala happening for this event and go to Italian for dinner.
My colleague had a recommendation for a charming Italian place called Tramonti. I swear, this is why I want to go to Italy. This is a family owned establishment filled with family charm and hospitality, I was even flirted with by one of the Italian waiters, all for fun, even my colleague was complimented more than twice. They are so fun, I love the language and the people are just like what “home” should feel like. Love it.
The place was so busy, but we opted to sit at the bar, and of course sitting at the bar allotted lots of opportunity for conversations from the the bartender and waiters, the bartender was a sweetheart, she was just full of Italian graciousness and warmth.
We ordered a bottle of wine to share and I enjoyed a wonderful salad with oranges and goats cheese with lemon vinaigrette, followed by the butternut squash ravioli and THEN believe it or not, chocolate cake with ice cream, yes it was evening of gluttony, while my colleague had the Tiramisu, holy smokes it was as if my taste buds died and landed in heaven.
We then called it an evening and settled back into the hotel, and I had a battle with this 10-base T wired situation considering I had seamless wireless at the Pod. Ry was my lifesaver, helping me with all the system network systems, thanks sweets. You’d think this hotel being triple the price would have some kind of wi-fi. But, no, the Pod in this area “kicked-ass”.
However, location here is absolute extravagance. It’s so quiet here in the room it’s hard to believe that I am a simple block from Times square now. Actually tonight, outside, it’s so insane, since it is a Friday night, which I almost cannot believe, the town is all a buzz. Crazy.
But overall everyone here has been more than friendly, more than polite. I swear I believe the people here in NY are far more friendlier than in Portland. Hard to believe, but I believe it to be true. I’ve had nothing but graciousness. Oh, except when driving. People just turn into a completely different person when they drive.
So, tomorrow, we have two sets of sampling but apparently my colleague registered me for 2 seminars and one of them will apparently be attended by THE Mr. Anthony Bourdain. Mmmmmm I need to brush up on my guerrilla camera skills. Ry is the pro at that one. We’ll see if I can do him proud eh?
Yes, so I’ll be 20 lbs. heavier when ya’ll see me again and well it’s just more of me to love.. right

Already Adventurous

Okay, it was a bit of a rough morning, but made it through, here’s what’s transpired thus far:
Oh just FYI, I am writing this at 11:45 NY time.
* Plane trip - met with switching seats with people because; A: I am traveling alone and B: I happened to get lucky to switch seats enough to get an entire row by myself, until someone got clued in and asked to take the window seat. It’s still better than being in an entirely full row. So at least there was ample elbow room in my row.
*Plane trip entertainment - Love Continental. I didn’t have to pay for a single extra thing. I didn’t have to pay for baggage, snacks or even in-flight entertainment. So, I watched Baby Mama (love that Tina Fey) and of course the worst tear jerker or best tear jerker of all time The Notebook, It took almost all my will to keep from just starting to ball. I really need to carry kleenex.
* Plane trip in flight delay - The flight was delayed leaving and we got to fly around a bit before we were able to land.
* Landed - phew - picked up bags. “Now what” -
* Transportation - there is a ground transportation help desk kiosk. Basically they push two shuttle services and I decided to go with that because battling commuter traffic on public transportation with my luggage really didn’t sound appealing. So Got a good deal on the shuttle. Direct service from Airport to Hotel. Nevermind this included about 5 other customers going somewhere else around Manhatten. It was basically getting a tour of Manhatten for $19. I got to see ground zero from the shuttle, I got to see the views of the city and I got to see the Brooklyn Bridge. Nevermind it took 3 hours, oh and there was the insane traffic. Geezus how does anyone get anywhere in this town and how in the world can there be so few accidents.
*Hotel - Pod hotel lives up to its name. I swear. I am in like a rectangle with a single bed a tiny sink, bathroom with shower is down the hall, there are 3 along the corridor and it really just reminds me of dorm living. It’s great really. I just really love having the sink in my room, it’s really quite cozy and uber modern. So it’s cool. I don’t have my card reader so I took a weak picture with my phone, it’s of the bed and tv and on the left is the sink.
*Dinner - So, at least I had a nice fulfilling breakfast on the flight. I was good until I was waiting for the 3 hour shuttle. I had a protein bar with me that I brought for just this kind of emergency. So ate that. But as soon as I got settled into my hotel, I got antsy and wanted to see some sites. So I decided to be adventurous and trek familiar territory. While first stopping at what looked like a very inviting pub, I saw a few but this one just said something more. I found a place at the bar. Looked at beers they had and saw someone with an Amstel Light, so that’s what I ordered. The bartender called me Lassie
$6 Amstel. That’s what NY is…. expensive.
*Hit the pavement - trekked towards Times Square, Madison Ave… I really didn’t like the idea of shooting a ton of pic’s because that would only serve as tourist sucker bait, so I tried to hold off, at Times it was fine. Then I was really famished and discovered a charming deli place that custom makes salads. Perfect! It was called Pax Wholesome Foods. I got salad with chickpeas, asparagus, feta artichoke hearts and they mix it all with your choice of dressing. Yum! Walked through Rockafeller Square. Guess What ! The skating rink is now there! It’s SO much smaller in real life but I got some Pic’s of that. I would love to do that while I’m hear too but know I’m way to chicken. It got a bit chilly as it got later, so I worked myself back to the Pod.
*Closing of the evening - I thought I brought great walking shoes. Boy was I wrong. I now have a blister on my toe
Lots of walking and I forget how long and big the blocks are here. So, decided going to a bar and sitting at the bar myself not too much fun, so I picked up a beer to go from the 2nd & 50th corner market and headed back to my pod.
* I’ve finished my beer, enjoyed the comfort here and the limited t.v. and am now ready to crash.
*Tomorrow - I need to check out and get to the next hotel where I will be staying for the event I’m working. I don’t need to be checked in to set-up for the event until 11:30, so that’s good and really it’s not far from the pod, so I’ll most likely walk it or cab it tomorrow.
*Nighty night. Here’s to adventures here in NY and next time I’m totally dragging Ry! ![]()
Back to the Big Apple

I cannot believe I’m hopping on a plane at 8am tomorrow to head back to New York.
How fortuitous that it was merely over a year ago that I was hopping along 5th avenue and witnessing Times Square with dear S&C before D.
It’s as if that was supposed to happen to get me ready for my trip this weekend.
I have to work this swanky event for our client this weekend and regardless of economics, there still seems to be room for money to be spent on good food, good wine and good fun. The pleasures in life.
Hmmmm at least we as human nature are still holding onto those luxuries and enjoyments to combat the fear and turmoil this period of economics is throwing at us.
It’s fascinating because in my world right now, you would never guess there is a “recession” god forbid we even whisper the word, but yes. It makes us panic and anxious but what can we do. We have to keep getting out of bed, we have to keep ourselves comforted in the knowledge that we willget through this. Our grandparents did so.. so can we.
My top list of things that I would LOVE to do while in NY are:
* Go up to the top of the Empire State Building and re-live all of my “Sleepless in Seattle”- thons.
* See a broadway, off or off off or even off off off broadway play, somehow, I just have to get a crash course in how all that “rush” ticket stuff works.
* See Gordon Ramsay at the London restaurant. I may just be able to gawk from the outside, take picture and look like a freak.. oh well
* Re-Visit Belgium memories via an afternoon visit to “Pommes Frites”
* Enjoy a traditional New York Bagel. I found Ess-a-Bagel on google maps and it’s close to where I am staying, so hopefully I’ll get to have a break and stop in for a delicious bagel.
* Re-visit the best clothing store ever, which is H&M and we don’t have one here in Portland.
* A Slice… somewhere, some kind of traditional NY piece of pizza.
I’ll be working the event, yes so it’s a balance between working and breaks and working but I want to take full advantage of those breaks. At least I’ve got a game plan in store.
I’ll be arriving by 4:15 or so, pick up luggage, take path train into town take subway 6 to 51st and I’ll be at my first hotel which is quite interesting. It’s called the Pod Hotel. In theory it’s all pods with shared baths. There is apparently a digital reader that will tell you when you are in your room what bathrooms are free.
So I’ll have my first night there, then transfer to the Millenium Broadway Hotel where the event I am working is being hosted. That’ll be quite nice, I’m sure. It’s so close to everything.
Then Sunday I’ll call the S&C after my event is done and we’ll hopefully get some fun and good time together. I’ll get to see the D!
I can’t wait.

I really cannot believe how much I try to capture the day, but somehow it just slips through and then it’s already a new day and I’m still trying to hold onto what I accomplished three days ago.
I had a wonderful last weekend. In fact it was a birthday weekend, filled with good food, good drink and good conversation.
Now it’s Thursday. I can see the clock ticking.. mocking my need to keep that minute the same, at least for just a few seconds more. I celebrate in tomorrow being a Friday, but that means I’m that much closer to the days of pure adrenaline rushes. Tacked to the brim with to do’s.
