Happy St. Patty’s

St. Patty’s was especially happy for me this year. But first let’s review this weekend
This new found freedom could be my doom.
Saturday was filled with stress and anxiety and so my trigger to get through the day was knowing I would be walking to KS to finish out the evening with friends, good food and good drink. The final presentation went okay, I neglected to find out what the required criteria was in which were being evaluated, so that was incredibly disheartening in terms of how our team was going to score on our presentation. We worked sooo incredibly hard too. But what could we do. We had to cover those pieces in the Q&A. It was incredibly anxiety inducing. However, it’s over… done. Just breathe.
So, Ry was there at KS and comforted my fretfulness and I found consolement in my drinks. I first had a mudslide and followed that by nuts and berries that had raspberry liquor (delicious) and then had a yummy coffee drink…then went to beer. Of course we continued to enjoy the beer from ryan’s new Precious after we got home. ![]()
Sunday was met with a dull headachey hangover, but I didn’t mind. I got to spend the day in the kitchen whipping up dinner to bring to mom & dad’s to celebrate mom’s birthday.
I made two versions of mac & cheese taken from the Till-a-mook mac & cheese contest.
I made the Beer with Bacon mac & Cheese and the Apple and Gruyer. I stunk up the house mighty well with sauteeing the shallots and frying up the bacon. But they turned out pretty good according to the family :).
I then made from my Cooking Light magazines a lemon pie (mom loves lemons) and a cream cheese chocolate brownie dish. Pretty good, although the center of the cream cheese dessert turned out kind of runny and I think that’s because the cream cheese called for is a fat free block and a 1/3 less fat block, and those lesser fat cream cheese’s have less fat to keep it together.
So it was a nice relaxing evening with the family and with Mr. Henry and celebrating mom’s birthday.
So, St. Patty’s was brilliant. The work day went well and one of my bosses is a tried and true Irishman so he concocted his signature Irish coffee, it was SUPER yummy! He got whipped cream chargers, so the whipped cream was genuine and absolutely delicious.
Good thing I got an hour run in earlier that day, I knew today was going to be filled to the brim in alcohol units.
I hopped the bus to meet the usual gang for St. Patty’s imbibing and fun. The usual gang is Mr.&Ms. Ghost dog, Miranda and Trav & Nicki. Lindamom babysat the Mr. Henry because the Rose isn’t quite the scene for a 7 month old, but I suspect Henry might follow in his papa’s footsteps and start the St. Patty’s traditional celebration when he can start walking
I was pretty bold in starting the evening with double whiskey’s and soda. I moved to a double amaretto and drank that like kool-aid, then moved back to whiskey. WOW! I along with Ms. Ghost dog and Travis (cannot remember if Miranda had one, big surprise), we had an irish car bomb which was awesome! Bailey’s dropped into Guinness and then you have totally chug it. Mmmmm. ![]()
So one would think I would be in incredible pain this morning nursing a major hangover, but I didn’t have too horrible of a head-ache really. I think it was the midnight snack I cooked (burned) up (grilled cheese sandwich) to help soak up that alcohol. Drank a ton of water and took vitamins.. that helps.
Then I closed the evening appropriately as I totally fell asleep on the couch watching QVC. While I may have embarrassed myself and acted like a lunatic, I had a great time with my family and friends who, thank god, are incredibly forgiving.

Hehe…I kinda wish I got to try the car bombs too. Maybe next year!
Oh definitely next year! We’ll make sure we’ve got a different Designated Driver, next year. I would be happy to volunteer!
Since I really won’t need the destressor next year like this year!
Nothing like a few drinks to ease the stress! Ahhhhhh. Here’s to NO stress!

You silly red Irish lassy! I think you covered St. Patty’s enough for our fam as well. Which consisted of a glass and a half of wine for me.
