Week back from Az….MBA Class COUNTDOWN!

I appropriately celebrated the last HR class on Saturday by meeting Ryan, Snooks & L at Kennedy School to see the last of the Tolkien celebration in effect.
The Class closed with a final quiz which kicked my butt. Have you ever been presented with something so familiar but yet appeared so foreign at the same time. This was the quiz for me.
My mind just went blank. I couldn’t believe it. I was embarassed and mortified turning my quiz in and I was the last of three to get done with the quiz too. What will save me are are all of the A’s I received on my papers. Phew!
We were handed the syllabus for our next and LAST class of the program. “Entrepreneurial Manager” MBA 509. God bless it. It’s as demanding as MBA 507, but it’s the last and the light is shining brightly in that once so long, dark and dreary tunnel.
So, by appropriately celebrating, I meant I enjoyed three delicious glasses of KS’s cuvee (red wine) and proceeded to look forward to a full, fattening and scrumtious meal at Concordia Ale House. I enjoyed the Hales Cream ale perfect chips and salsa, gardenburger and fries! It was sooo bad but sooo good! I figured my figure could go by the wayside at least until I no longer have the excuse of school stress to warrant ample amounts of comfort food.
Speaking of comfort food. A nice respite from worrying about our next due assignments for school I conducted a feast for the Vanderzanden Clan. I had to double the recipe, but it turned out pretty damn good. I am so proud. I veggie chopped, potato mashed and shopped.
Menu: Salad, Smoky Turkey Shepherd’s Pie, roasted asparagus, Foccacia (made from scratch with sake), and then a nice and light frozen chocolate eclair dessert.
Needless to say, I, again, put my figure to the wayside because this earthly pleasure of enjoying food, especially (I hate to say it) meat (chicken & Turkey) has just opened a wealth of culinary pleasure.

mmm… the shepherd’s pie was delicious.
Thanks Mannnnn.. yeah almost too delicious I’ve gained 2 lbs in the last 2 days, that’s a pound a day.. at this rate I am doomed
